Warm and Cozy Sweet Potato Bread Pudding – A Holiday Favorite

During the holiday season, I love serving up comforting, festive treats that bring everyone together around the table. One of the biggest hits in my home this year was this luscious Sweet Potato Bread Pudding. Its rich flavors and warm spices made it the perfect dessert to celebrate with family and friends. The combination of sweet potatoes, cinnamon, and pumpkin pie spice creates a cozy, seasonal flavor, while the sweet glaze drizzled on top adds the perfect finish. Every bite was met with smiles and satisfied sighs—this recipe truly became a highlight of our holiday feast!
Sweet Potato Bread Pudding
Ingredients
For the Bread Pudding:
1 loaf of Brioche bread, cubed
4 large eggs
1 cup baked and mashed sweet potato
2 tsp pumpkin pie spice
2 tsp ground cinnamon
2 cups milk
1 cup brown sugar
½ cup heavy cream
¼ cup melted butter
1 tbsp vanilla bean paste or extract
For the Glaze:
3 tbsp butter
¾ cup brown sugar
¼ cup heavy cream
⅓ cup evaporated milk
Directions
Prepare the bread and soak: Cube the brioche bread and place it in a greased baking dish. In a mixing bowl, whisk together the eggs, baked and mashed sweet potato, pumpkin pie spice, ground cinnamon, brown sugar, vanilla, milk, heavy cream, and melted butter until smooth. Pour this mixture evenly over the bread cubes, making sure all pieces are well coated. Let it sit for about 10 minutes so the bread absorbs the flavors.
Bake the pudding: Preheat your oven to 350°F (175°C). Bake the bread pudding uncovered for 40 to 45 minutes, or until it’s set and golden brown on top.
Make the glaze: While the pudding is baking, melt the butter in a saucepan over medium heat. Stir in the brown sugar, then add the heavy cream and evaporated milk. Bring the mixture to a gentle boil, stirring frequently. Let it cook for a couple of minutes until smooth and slightly thickened. Remove from heat.
Finish and serve: Once the pudding is out of the oven, pour the warm glaze over the top. Serve immediately for a warm, indulgent dessert that’s perfect for holiday gatherings.
