Spiced Sweet Potato Pound Cake with Cream Cheese Icing

I’ve always loved sweet potatoes—they’re such a versatile ingredient that adds natural sweetness and a rich, earthy flavor to any dish. Coupled with my favorite pound cake, this combination creates a comforting dessert that’s both moist and bursting with warm spices. The creamy texture and fragrant aroma make every bite a delightful experience, especially when topped with a smooth cream cheese icing. This sweet potato pound cake is a true labor of love—ideal for cozy gatherings or a special treat to enjoy at home.


Sweet Potato Pound Cake


Ingredients


  • 3 cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • ½ teaspoon salt

  • ½ teaspoon baking soda

  • ½ teaspoon nutmeg

  • 1½ cups unsalted butter (room temperature)

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 5 large eggs (room temperature)

  • 1 cup mashed sweet potatoes

  • ½ cup buttermilk

  • 1½ tablespoons vanilla bean paste

For the Cream Cheese Icing:

  • 8 oz cream cheese (room temperature)

  • ½ cup powdered sugar

  • ¼ cup heavy cream

  • 1 teaspoon vanilla extract

Directions


  1. Preheat your oven to 325°F (160°C). Grease and flour a 12-cup bundt pan.

  2. In a bowl, whisk together the flour, baking powder, cinnamon, salt, baking soda, and nutmeg.

  3. In a large mixing bowl, whip the room temperature butter and sugars until fluffy. Mix in the vanilla bean paste.

  4. Add eggs one at a time, beating well after each addition.

  5. Stir in the mashed sweet potatoes until well combined.

  6. Gradually add the dry ingredients, alternating with the buttermilk, beginning and ending with the dry. Mix just until combined.

  7. Pour the batter into the prepared bundt pan and smooth the top.

  8. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for about 15 minutes, then remove and let cool completely on a wire rack.

  9. To prepare the icing, beat the cream cheese until smooth. Mix in powdered sugar, heavy cream, and vanilla until creamy and spreadable.

  10. Once the cake is fully cooled, generously frost with the cream cheese icing.
