Simply Delicious Iced Brown Cinnamon Sugar Cookies

Ingredients
Cookie Dough:
¾ cup unsalted butter, browned
¾ cup light brown sugar
¼ cup granulated sugar
1 large egg + 1 egg yolk
1 tablespoon vanilla bean paste or extract
¼ teaspoon ground cinnamon
1 teaspoon salt
1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cornstarch
Icing:
½ cup powdered sugar
Dash of cinnamon
1½ to 2 tablespoons heavy cream
½ teaspoon vanilla bean paste or extract
Directions
In a saucepan, brown the butter over medium heat. Remove from heat and let cool slightly.
In a mixing bowl, combine the browned butter with light brown sugar and granulated sugar. Mix until well blended.
Add the egg, egg yolk, and vanilla bean paste; mix until smooth.
In a separate bowl, whisk together the flour, cinnamon, salt, baking soda, baking powder, and cornstarch. Gradually add these dry ingredients to the wet mixture, folding until combined.
Scoop the dough into 1-2 inch balls and place them on a parchment-lined baking sheet.
Bake in a preheated oven at 350°F (175°C) for 7 to 10 minutes, until edges are golden. Allow cookies to cool completely before icing.
To make the icing, whisk together powdered sugar, a dash of cinnamon, vanilla bean paste, and heavy cream. Adjust the consistency by adding more heavy cream or powdered sugar as needed.
Once cookies are cool, spread or pipe the icing onto each cookie. Let the icing set before serving.
