Cozy Slow Cooker Chicken & Gnocchi Soup
Ingredients
3 celery stalks, chopped
2 carrots, grated
½ sweet or yellow onion, diced
2 tbsp minced garlic
2 chicken breasts
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp thyme
1 tsp Italian seasoning
1 tsp all-purpose seasoning
1 full carton of chicken broth (32 oz)
1 lb Gnocchi
1 cup heavy cream
¾ cup Parmesan cheese, grated
2 large handfuls of baby spinach
Directions
Add the chopped celery, grated carrots, diced onion, minced garlic, chicken breasts, smoked paprika, garlic powder, onion powder, thyme, Italian seasoning, and all-purpose seasoning to the slow cooker. Pour in the chicken broth.
Cover and cook on high for 4 hours until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts, shred them using two forks, then return the shredded chicken to the slow cooker.
Stir in the gnocchi, heavy cream, Parmesan cheese, and spinach.
Cover and cook on high for an additional 30 minutes until the gnocchi are tender and the spinach is wilted.
