A Creamy, Comforting Classic with a Flavorful Twist

This soup is one of my all-time favorites for the fall and winter seasons — it’s so comforting and truly feels like a hug in a bowl. The warm, hearty flavors are perfect for chilly days when you need something soothing. The best part is, just like a loaded baked potato, you can top it with your favorite toppings—think sour cream, green onions, extra bacon, or even a sprinkle of more cheese—to make it perfectly personalized to your taste buds.
Loaded Baked Potato Soup
Ingredients
1 pound bacon(of your chocie), chopped
½ cup celery, chopped
1 onion, diced
1 tbsp minced garlic
Garlic & Herb seasoning (to taste)
Onion Powder (to taste)
Garlic Powder (to taste)
Cajun Seasoning (to taste)
¼ cup unsalted butter
⅓ cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 cup milk
2 cups shredded cheddar cheese
8 yellow potatoes, diced
Directions
In a large pot, cook the chopped bacon over medium heat until crispy, stirring frequently. Remove bacon from the pot and set aside, leaving the bacon grease in the pot.
Add chopped celery, diced onion, and minced garlic to the pot; cook until translucent and fragrant.
Season the vegetables with garlic & herb seasoning, onion powder, garlic powder, and Cajun seasoning according to your taste preference.
Melt the butter in the pot, then stir in the flour to create a roux. Cook for 1-2 minutes, stirring constantly.
Gradually pour in the chicken broth, heavy cream, and milk, stirring until smooth. Add the diced potatoes.
Bring the mixture to a boil, then reduce the heat and simmer until potatoes are fork-tender, about 15-20 minutes.
Mash some of the potatoes directly in the pot to thicken the soup slightly, then stir in the shredded cheddar cheese until melted and creamy.
Return the cooked bacon to the soup, reserving some for topping.
Serve hot with your favorite toppings like extra bacon, sour cream, green onions, or croutons for an elevated experience.
