No-bake Strawberry Swirl Cheesecake
Ingredients
Cheesecake Filling:
3 (8 oz) blocks of cream cheese, softened
2 cups powdered sugar
1 tbsp vanilla bean paste or extract
2 cups heavy whipping cream
Crust:
32 Lotus Biscoff cookies, crushed
¼ cup melted unsalted butter
Strawberry Topping:
2 cups halved or diced strawberries (stems removed; frozen can also be used)
½ cup granulated sugar
2 tsp lemon juice
Optional Whipped Cream Topping:
2 cups heavy cream
¾ cup powdered sugar

Step 1: Prepare the Crust
Crush the Cookies: Use a food processor or your preferred method to crush the Lotus Biscoff cookies into fine crumbs.
Mix with Butter: In a mixing bowl, combine the cookie crumbs with melted unsalted butter until well combined.
Form the Crust: Line the bottom of a springform pan with wax paper. Press the cookie mixture evenly into the bottom of the pan. Place it in the freezer while you prepare the cheesecake filling.
