When life gets hectic and the last thing I want to do is spend hours in the kitchen, this Cheesy Chicken Tortellini comes to the rescue. It’s my secret weapon for busy weeknights—quick, easy, and so tasty even my kids (and husband) can’t get enough. With creamy cheese, savory chicken, and pasta that’s cooked to perfection, it’s like a restaurant-quality meal you can whip up in no time. Trust me, this one’s going straight into your dinner rotation—because dinner should be simple, satisfying, and maybe a little cheesy, right?
Cheesy Chicken Tortellini
Ingredients
6-8 boneless, skinless chicken thighs
Chicken bouillon seasoning
Garlic powder
Onion powder
Paprika
Black pepper
Adobo seasoning
2 tbsp butter
2 tbsp minced garlic
3 tbsp tomato paste
6 oz fresh spinach
2 cups heavy cream
18 oz refrigerated 5 cheese tortellini
5 oz shredded parmesan cheese
Optional: shredded Italian cheeses (mozzarella, mozzarella blend, etc.)
Directions
Prepare the Chicken: Season the chicken thighs with chicken bouillon, garlic powder, onion powder, paprika, black pepper, and adobo seasoning to taste.
Cook the Chicken: In a skillet, sear the seasoned chicken thighs in olive oil over medium-high heat until they are evenly browned on both sides. Once cooked through, remove from the pan and set aside to rest.
Make the Sauce: Reduce the heat to medium-low. In the same skillet, melt the butter and add minced garlic, stirring until fragrant. Stir in the tomato paste and fresh spinach, letting the spinach wilt down. Pour in the heavy cream and season with Italian seasoning, onion powder, and garlic powder as desired.
Finish the Sauce: Stir in the shredded parmesan cheese and cook until the sauce thickens slightly.
Cook the Tortellini: Meanwhile, prepare the tortellini according to the package instructions.
Combine Everything: Slice the rested chicken as desired and add it back to the skillet with the sauce. Then, stir in the cooked tortellini, ensuring everything is nicely coated.
Top and Serve: Sprinkle with optional shredded Italian cheeses on top and serve hot. Enjoy the perfect blend of creamy, cheesy, and savory flavors in every bite!
