Hi There!

Welp… at least it was my plate! 😭💀

Turning cinnamon rolls into pancakes might just be my favorite breakfast combo. The swirl caramelizes right into the pancake, and the cream cheese icing is ridiculously good.

Save this for next weekend and make it for the family! 🥞

The Cinnamon Swirl:
• 4 tbsp softened butter
• 1 cup brown sugar
• 2 tbsp pancake batter (the secret ingredient so the swirl doesn’t run everywhere!)
• A generous amount of cinnamon
• 1 tsp vanilla

The Cream Cheese Icing:
• 4 oz softened cream cheese
• ⅓ cup powdered sugar
• Splash of vanilla & milk (to reach your desired drizzle consistency… just make sure your cap is screwed on tight 😭)

To Make:
Whip up your favorite pancake mix (or use my homemade buttermilk recipe). (comment BUTTERMILK and I'll send it)
Pour your batter onto a medium-low griddle. Once bubbles form, pipe the cinnamon swirl in a spiral over the top.
Flip carefully and cook until golden!
Drizzle (or dump, apparently) the cream cheese icing over the warm stack.

Once you make these sweet potato pancakes
...it'll be hard to go back to classic.

You'll need
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon
- 1 tsp pumpkin spice
- 1 cup sweet potato, baked and mashed
- ⅓ cup brown sugar
- 1 large egg
- 3 tbsp vegetable oil
- 1½ cup whole buttermilk
- 1 tbsp vanilla bean paste

Combine your dry ingredients and set aside. Combine your wet ingredients. Add your dry to your wet ingredients and cook on medium heat until bubbles form then flip

Enjoy 😉

Cast Iron Shrimp Bake 🦐🧈 Everything you love about a seafood boil made easy in one skillet.

Ingredients:
1 lb large shrimp (peeled & deveined)
1 lb beef sausage, sliced
Mini gold potatoes, parboiled
Corn on the cob & boiled eggs
1 stick butter + ½ cup chicken broth
½ diced onion + minced garlic
Cajun seasoning, seafood seasoning, & cayenne

Easy Steps:
Sear sausage in the cast iron skillet; set aside.
Sauté onion and garlic in the same pan. Melt in butter, add broth and seasonings, and simmer 2 mins.
Assemble the pan with potatoes, corn, seared sausage, boiled eggs, and raw shrimp.
Pour the garlic-butter sauce all over and bake at 400°F for 12–15 mins until shrimp are cooked through.

Apple Filling: 5 Granny Smith apples,peeled and diced/sliced Juice of half a lemon ¼ cup unsalted butter 1 tbsp vanilla extract or paste ¾ cup brown sugar ⅓ cup white sugar 2 tsp cinnamon ½ tsp nutmeg 1 tsp apple pie spice ¼ cup water 2 tbsp cornstarch+ 2 tbsp water (for slurry)

Pie Crust (or use store-bought): 2⅔ cups AP flour 1 tsp salt 1 cup cold unsalted butter,cubed/grated 5 tsp sugar 5-8 tbsp ice cold water

Instructions:

1. Peel and dice apples. Add to a pan with butter, lemon juice, sugars, and vanilla.
2. Once apples are mostly cooked, add the cornstarch slurry and remove from heat.
3. For the crust: Add dry ingredients to a bowl or food processor. Add butter, then slowly add cold water until dough forms.

Threw these surf & turf quesadillas together last minute and… they did not disappoint. No strict rules here, just season with your heart! I seasoned mine with some Sazón, garlic & onion powder, cumin, cayenne for a little kick, and fresh lime juice.

Grilled everything down, loaded it up with peppers, Monterey Jack, cheddar, and mozzarella for that ultimate cheese pull, and finished with fresh cilantro. Crisped that tortilla up to golden perfection!

Serve it with plenty of salsa and cold sour cream on the side, because you already know that’s non-negotiable. 😮‍💨🧀
